News to Me

December 8th - I've PASSED the Certified Dietary Manager (CDM) exam.  This means that I also have earned the designation of Certified Food Protection Professional (CFPP).  These designations are useful in hospitals, Nursing Homes, Retirement Homes and Schools.

December 5th - I started volunteering at Daily Bread, in Melbourne, a local "soup kitchen" which provides health screening, hygienic facilities and a daily lunch for about 350 people a day, all from donated foods and services.  At first it is only a couple days a week, but now that I've seen a little more of their operation, I'll be taking more volunteer slots in the weeks to come.

November 19 - I got my CPR designation from the American Heart Association.  I'm now certified in Cardio-Pulmonary Resuscitation (CPR), Basic Life Support (BLS) and the Automatic External Defibrillator (AED).

November 14th - Attended a seminar hosted by Nick R. S. Hall, Ph.D. on Food for Thought:  How Nutrients Affect Mental Health and the Brain in Cocoa Beach.  This explains a lot of things. 

For a Chef, it explains the relationship between brain reward and food.  For instance, it is not the chemical composition of macaroni and cheese that makes it comfort food.  Rather it is the taste perception derived from eating it that turns us on.  When the same foods are consumed via intragastric gavage, no such response is observed.

On October 29th, I sat for the Certified Dietary Manager Certification exam.  After about 6 weeks of studying and taking dozens of sample examinations, I felt I was ready.  My preparation must have paid off because I felt the exam was very easy for me.  250 questions over 4 hours.  I finished in less than two hours.

October 28th - Gave a Pumpkin-Carving class to 25 enthusiastic and attentive students at Bayside High School in Palm Bay.  Great fun!  Take a look in the Gallery section and you'll see a pumpkin I carved.
